This unusual take on apple crisp was one of a number of recipes prepared and served at a special apple-themed event for students at Brandeis University in October 2021.
6 c fresh New England apples, diced
5 c apple cider
2/3 c quinoa
1 T cinnamon
4 T flour
¼ t salt
2/3 c old-fashioned rolled oats
4 T brown sugar
4 T vegetable oil
Preheat oven to 350ºF. Lightly grease an 8×8 baking dish.
In large bowl, combine apples, cider, quinoa, cinnamon, flour, and salt.
In a separate bowl, combine oats, brown sugar, and oil. Toss to coat evenly.
Pour apple mixture into pan, then add oat topping.
Bake 45 minutes or until topping is golden brown and filling is bubbly.
