This recipe was prepared and served at a special apple-themed event for students at Brandeis University in October 2021.
1 lb turkey breast
2 T apple cider
2 T maple syrup
2 T brown sugar
Salt and pepper
Preheat oven to 350ºF. Place turkey on a roasting rack in pan with 1/4″ deep water.
Season with salt and pepper. Cover pan with parchment and foil.
In small saucepan combine apple cider, maple syrup, and brown sugar. Simmer 5 minutes.
Roast turkey in oven 45 minutes.
Remove from oven, baste with 1/3 of the glaze, then return to the oven for an additional 20 minutes.
Repeat, and return to oven for 10 minutes.
Repeat with remaining 1/3 glaze, then return to oven until internal temperature reaches 165ºF.
Let rest 10 minutes before carving into thin slices.
