This salad was among the many recipes prepared and served at a special apple-themed event for students at Brandeis University in October 2021.
1 c New England apple, peeled and diced to ½” pieces
1 c canned beets, drained, julienned
2 fresh radishes
2 T onion, bias cut
2 T red wine vinegar
2 T olive oil
1/2 t sugar
1/2 t allspice
1/2 t salt
1/2 t pepper
Dash hot sauce
In large bowl combine apples, beets, radish, and scallions.
In a small bowl, whisk together, vinegar oil, sugar, allspice, hot sauce, salt, and pepper.
Pour dressing over apple mixture and toss well.
Serves 2-4.
