Pork and Apple Stew

Ingredients
- 2 lbs pork, cubed
- 1/2 c flour
- 1/2 t salt
- 1/4 t pepper
- 1/2 t garlic powder
- 2 1/2 T olive oil
- 1 onion, chopped
- 4 carrots, peeled and sliced
- 1 sweet potato, peeled and cubed
- 3 potatoes, peeled and cut into eighths
- 1 lb butternut squash, peeled and cubed
- 1 t cinnamon
- 1/2 t thyme
- 1/4 t nutmeg
- 1/8 t ground ginger
- 1/8 t ground cloves
- 1 c apple juice or cider
- 2 c water
- 3 c sweet white wine
- 3 McIntosh or other New England apples, peeled, cored, and sliced into eighths
- 1 c green beans, chopped into 1″ pieces
Instructions
- Combine pork, flour, and seasonings in a sealable bag; shake to coat. Heat oil in large skillet and add pork; brown on all sides. Reserve extra flour mixture.
- In a slow cooker, combine pork with remaining ingredients except apples and green beans, and cook on low for 8 hours. Make paste with reserved flour mixture dissolved in a small amount of water; stir into stew to thicken. Add apples and green beans; cook on high for 15 minutes and serve.
