Preheat oven 400ᵒF
6-8 New England apples
1/2 c sugar
2 T brown sugar
1 T flour
1/2 t cinnamon
1/4 t nutmeg
zest of 1/2 orange
zest of 1/2 lemon
2 T seedless raisins
1-2 T orange juice
1-2 T butter
Prepare crusts for top and bottom of 9” pie. Line pie plate with bottom crust.
Combine sugars, flour, nutmeg, and cinnamon and rub generous tablespoon into crust.
Stir grated peels into remaining sugar mixture.
Core and slice apples.
Add apples to pie plate, sprinkling in raisins.
Drizzle orange juice over top, dot with butter and fit top crust over apples, fluting along the edges. Cut steam vents into pastry top.
Bake 40-45 minutes, or until apples are soft.
