Topaz, also known as Crimson Topaz, is a medium or medium-large apple. Its skin is crimson red over a yellow skin. Its cream-colored flesh is crisp and juicy, with complex, spicy flavor. It is a good choice for people looking for a tart apple, and it is good in cooking. Developed for disease resistance in the Czech Republic in the 1990s, Topaz is a cross between Vanda and Rubin, two other Czech varieties.
