Description
Elstar is a tart yellow apple with red streaking, and its flesh is cream-colored and crisp. It is a good fresh-eating and culinary apple, likened to Jonagold. As it matures, its flavor mellows.

History
A cross between Golden Delicious and Ingrid Marie, Elstar was first grown in the 1950s in the Netherlands. It was distributed to America 20 years later. Because it favors a cooler climate, it is not widely grown in the United States.
