One of the ways Americans have made the apple distinctly their own is in the kitchen. Of course there is the Waldorf Salad, introduced at the Waldorf Astoria Hotel in New York City in 1893. The original recipe of maître d’hôtel Oscar Tschirky comprised diced red-skinned apples, celery, and mayonnaise. Eventually, chopped walnuts were added to the mix, and today a wide variety of apples of any color can be used to make this unique salad.
The classic Waldorf Salad is as simple and straightforward as it gets. You can substitute yogurt for mayonnaise for a slightly healthier version.
1 c Cortland apple, diced
1 c celery, diced
1/2 c walnut or pecan meats
1/2 c mayonnaise
Mix all ingredients.
