Swiss Muesli

Ingredients
  • Muesli:
  • 2 c apples, unpeeled and shredded
  • 1-1/2 c rolled oats
  • 1-1/2 c water
  • 1-1/2 c (9 oz) prunes, pitted, whole or halved
  • 2 T honey
  • 2 T lemon juice
  • 1/2 t cinnamon
  • Toppings:
  • fresh fruit, sliced (apple, banana, pineapple, orange)
  • almonds or pecans, chopped
Instructions
  1. Combine muesli ingredients, cover, and refrigerate overnight.
  2. In the morning, spoon some of the muesli into a cereal bowl.
  3. Top with your choice of fresh fruits and nuts. Serve with milk or a dollop of plain yogurt.
Notes
Muesli can be stored in covered container in refrigerator for several days.
